Riza's fir tree honey has 30% less sugar than the average honey and therefore will never crystallise. This is because our honey is derived from honeydew, not flower-nectar.
A 2009 study published in the International Journal of Food Sciences and Nutrition indicated that pine honey (fir belongs to this family) is among the best sugar alternatives in relation to other honeys. They also found pine honey to have particularly strong anti-bacterial properties.
